Alfajores de Maicena

Ingredients

  • Dough
  • 1 ½ cups or 230 g of all-purpose flour
  • ½ cup or 100 g of cornstarch
  • 200 grams of unsalted butter or baking margarine
  • 8 tablespoons, 100 g or ½ cup of powdered or extra-fine sugar
  • Manjar blanco
  • 1 cup of evaporated milk
  • 1 cup of condensed milk
  • Powdered sugar for dusting

Preparation

Dough

Process all the ingredients in a food processor, or knead them by hand. Remove from the processor, wrap in plastic and refrigerate for at least two hours. Take the dough out of the refrigerator, flour the work surface well, and roll the dough out with a rolling pin until it's thin enough, but not too thin. Using a round cutter or a glass, cut circles of the desired size and arrange them on a baking sheet. Preheat the oven to 350°F or 180°C. Bake until lightly golden. Cool and store in a tin until ready to use. Fill with manjar blanco and dust with powdered sugar.

Manjar blanco

Combine the two milks in a heavy-bottomed pot and cook over low heat for about an hour. Stir constantly with a wooden spoon until you can see the bottom of the pot. Let cool before filling the alfajores.
