  • 9 medium apples, mixed variety
  • 1 cup plus 2 tablespoons granulated (white) sugar
  • ¾ teaspoon salt
  • Juice of ½ lemon
  • ¾ cup (12 tablespoons) unsalted butter
  • 1 cup unbleached all-purpose flour
  • 2 tablespoons brown sugar

Prepare the filling. Preheat the oven to 350°F. Cut the apples into ⅓-inch-thick slices. Mix them with 2 tablespoons of granulated sugar and ¼ teaspoon of salt. Add the lemon juice. Combine.

Assemble the apples. Rub the baking dish with butter. Dump in the apples. Top the apples with 3 tablespoons of butter.

Make the topping. Whisk together the flour, brown sugar, cinnamon, 1 cup of granulated sugar, and ½ teaspoon of salt. Add 8 tablespoons of butter pieces. Work it into flour-coated bits.

Top and bake. Sprinkle the topping over the apples. Bake for 45 to 60 minutes. Serve with ice cream of your choice (optional).
