Chimichurri

Ingredients

  • 2 tablespoons fresh parsley
  • ½ tablespoon oregano
  • 1 garlic clove
  • ½ tablespoon paprika
  • ½ tablespoon crushed red pepper
  • ½ teaspoon salt
  • 1 splash of balsamic vinegar (or regular vinegar)
  • Black pepper
  • Olive oil

Preparation

Mince the garlic and the parsley (use only the leaves). You can use one or two garlic cloves depending on your personal taste.

Put two tablespoons of the garlic and parsley mixture in the bottom of a jar. Add the sweet paprika, the crushed red pepper (add more if you want it spicier), the oregano, the pepper, and the salt.

Pour in olive oil (for a stronger flavor) or sunflower oil (for a milder result) until the seasonings are covered. Add a generous splash of balsamic vinegar or regular vinegar.

Close the jar and shake vigorously to mix and blend all the ingredients until you get a homogeneous sauce. Let it rest in the fridge for a week before using for best results.
