





Brown the ground beef and set aside.
In the same pot, prepare the aderezo with the onion cut in brunoise, ground garlic, salt, pepper, and cumin.
Once the aderezo is ready, add the tomatoes cut in brunoise and the tomato paste, add the previously browned beef, and let it cook for approximately 25 – 30 minutes.
In a skillet, make an omelette with 3 eggs, salt, and pepper, add ¼ of the beef mixture and fold in half. Cook on both sides until the inside is set and serve with rice.
