




Wash the chicken pieces well.
Prepare a mixture of: ground garlic, pepper, paprika, salt, a little oil, and red wine vinegar. Mix it well and rub each piece of chicken thoroughly with it. Let it rest about an hour before putting it in the pot.
In a regular amount of oil, brown the chicken on both sides, then add hot water until it covers. Let it simmer about half an hour, check the liquid level, and if you'd like you can thicken it with chuño or cornstarch.
